Don't ever assume...

Don't ever assume that because you pay the car mechanic hundreds of dollars the car is fixed...
   Simply put: if the light is still on, you didn't fix the problem, even I can tell that! I want my moola back and don't worry, I called the shop in the afternoon and had the assurance that they would contact me back but have I heard from them yet? Of course not... why, why, why (me banging my head on the steering wheel for the 2nd time because yes, it's happened before with the same shop)...

Dead end

So I thought it would be a fantastic idea to sell my new furniture items on the street in Salt Lake, like, you know, those Mexican food vendors that stand on the corner and make you wonder if what they're selling is tasty and also safe to eat...anyway, It turns out you need a business licence (which I am more than happy to obtain) but if you want to be a street vendor, furniture isn't something you can sell... back to square one... mabye the farmer's market at the Grist mill???

I know, I know....

So, I know it could be called laziness or "lameness" as my sisters might say, but I haven't had my head on straight for a long time... we've been working on our basement remodel and I must say it is FABOO! I will post pics later, but for now, I am sitting in my robe, typing on the computer, telling my kids that "breakfast will be ready in a bit" and hoping they are not going to starve today.  Ahhh, summer...

Epic Failure

I know...those of you who know me I never make mistakes...ha ha ha.  The epic failure of this week (as there are many each week) was the silly sweet potato ravioli I made for dinner.  They were delicious, don't get me wrong, however, layering them between wax paper was a DISASTER!!!!
    NOTE TO SELF:
          hot soggy things don't do well layered between wax paper DUH!
I love wax paper in my ravioli...not.

Hot + soggy + wax paper = EPIC FAILURE!
This is how it should've looked (courtesy of Rachel Ray Magazine)  and aside from a wax paper incident, it WOULD have looked this perfect! 

I dare you to give it a try, but watch-out! The chipotle peppers are HOT so maybe take it down to 1/2 a chipotle...also I didn't have pumpkin seeds so I substituted roughly chopped almonds (still delicious) AND...I found a new love "queso fresco"  It is a delicious cheese from south of the border, but readily available at most stores (I found it in Tooele which means that you can get it anywhere ). It crumbles perfectly.  The texture and flavor remind me of ricotta cheese, although slightly saltier.  I crumbled some in a salad with lemon juice, olive oil, salt, and pepper and YUMMY!
